The picturesque restaurant is under the management of local chef, John Roche since 2012. Tully Mill restaurant offers a casual dining experience with quality food. The menu is traditional with modern twists, local and seasonal produce are used where possible. For a romantic dinner for two, family gatherings or for private functions such as weddings, the restaurant can cater for all.

How did the Business Sustainability Training Programme benefit you and your business?
The programme benefit our business by highlighting the importance of sustainability, and prompting us to think of news ways to be more sustainable in all that we do, as a producer, consumer and business. Our menus had always had a local focus, but the programme opened up other ways for us to consider and think about sustainable practices. It allowed us to be able to talk to all of our staff about sustainability and make it really at the core of what we do; this was recognised in our Best Sustainable Practices award for Fermanagh in the Irish Restaurant Awards 2022.
What is the main sustainability focus of your business?
The main sustainability focus of our business is our concentration on using local grown and sourced ingredients and local suppliers whenever possible. We believe that Fermanagh has some of best ingredients on offer, and by choosing these we are able to not only highlight and promote what the county has to offer, but also reduce our environmental impact by reducing the food miles of our menus.
